Vegetarian Stir-Fry

Stir-Fry meals are easily customizable to make good use of last night’s leftovers. Slight variations in spices can take you from a more Asian inspired dish to curry or middle eastern.

Ingredients:

  • Leftover rice (white, wild rice, your preference)
  • Fresh vegetables
  • Green onion
  • Sesame oil
  • Soy sauce
  • Salt
  • pepper

Instructions:

  1. Sauté any white onion until translucent. If using garlic, mince and keep from burning. Add diced vegetables with sesame oil and cook.
  2. Add eggs and cook, then add the rice.
  3. Finish with soy sauce or any spicy oil and green onions.

Additional Information: If you are not a fan of rice you can always substitute your favorite noodle.
