INGREDIENTS

2 Cups of Diced Yellow Onions

1 Cup of Diced Bell Pepper

1/2 cup diced Banana Peppers

1 Cup Diced Celery

2 Tblsp Finely Chopped Parsley

2 Tblsp Finely Chopped Red Chili Peppers

2, 12 inch Pieces Smoked Andouille Sausage

4 Chicken Thighs boiled in enough water to cover them with 1 inch of water.

1 Cup of The KingDude’s Famous Chocolate Roux (see separate recipe)

Boil the chicken thighs for 50-60 minutes until completely cooked on the bone RESERVE THE WATER, this is your chicken stock!
